Assessment of filtration aids for wine fining

Fining is a procedure to clarify beverages like wine or fruit juice and also harmonize them with regard to flavor. Effective pre-clarification by filtration of the must is a pre-requisite for economic wine making of constant quality. Filtration aids such as cellulose, kieselguhr or perlite can be modified and thus be adapted to the respective must lot which allows an optimized filtration process. Filtration aids can be characterized by measuring their surface charge with the M├╝tek SZP-06 System Zeta Potential laboratory device.
