Surface charge as an indicator for yeast vitality

Apart from the raw materials malt, hops and water, yeast is an important ingredient in beer production. Yeast vitality is a major factor and to assess it, various methods are applied today, e.g. yeast cell count, ICP data or identification of pressure increase and extract decrease. With the M├╝tek PCD-04 Particle Charge Detector combined with an automatic titrator  a new important characteristic value for the rating of yeast vitality is available: the surface charge of the yeast.
